Cheese Souffle
Ingredients
Serves 4 - Ready in 1 hour 45 minutes
  • 25g butter
  • 25g plain flour
  • 250g goats cheese, crumbled
  • 50g grated parmesan
  • 2 tbsp chopped chives
  • 5 eggs, seperated
  • 250ml milk
  1. Heat the oven to 200c/180c fan/gas mark 6
  2. Butter 4x 250ml souffle dishes.
  3. In a saucepan melt the butter, stir in the flour and cook for about a minute. Slowly add the milk, stirring constantly to make a thick sauce. Cook for a few minutes to remove the floury taste.
  4. Add the cheeses and chives. Add 4 egg yolks and season generously. Mix well
  5. In a seperate bowl whisk the eggs whites until stiff and form soft peaks. Fold the egg whites into the cheese mixture and pour into the buttered dishes.
  6. Cook for 12-15 minutes until they are risen and golden.
