Cheese Souffle
Ingredients
Serves 4 - Ready in 1 hour 45 minutes
- 25g butter
- 25g plain flour
- 250g goats cheese, crumbled
- 50g grated parmesan
- 2 tbsp chopped chives
- 5 eggs, seperated
- 250ml milk
- Heat the oven to 200c/180c fan/gas mark 6
- Butter 4x 250ml souffle dishes.
- In a saucepan melt the butter, stir in the flour and cook for about a minute. Slowly add the milk, stirring constantly to make a thick sauce. Cook for a few minutes to remove the floury taste.
- Add the cheeses and chives. Add 4 egg yolks and season generously. Mix well
- In a seperate bowl whisk the eggs whites until stiff and form soft peaks. Fold the egg whites into the cheese mixture and pour into the buttered dishes.
- Cook for 12-15 minutes until they are risen and golden.
