Chicken wrapped in Parma Ham
Ingredients
Serves 4 - Ready in 35 minutes
- 4 skinless chicken breasts
- 250g mozzarella, sliced into 8
- 20g basil
- 6 slices parma ham
- 1tsp olive oil
- 1 tin new potatoes
- 1 knob butter
- 1 teaspoon pureed herbs
- salad, to serve
- Pre heat the oven to 200c/180c fan/gas mark 6.
- Lay the chicken fillets out on a chopping board. Season all over. Make a small incision about 4cm long and 3cm deep in the middle of each.
- Stuff 2 slices of mozzarella and a sprinkling of basil into the incision. Wrap each chicken breast with 1½ slices of parma ham, to conceal the incision.
- Heat the oil in a pan and sear the parcels on both sides until golden.
- Place into a roasting tray and cook for around 20 minutes, or until cooked through.
- Heat the new potatoes. Drain and the whilst still over the hear stir in the butter and pureed herbs.
- Serve with the potatoes and a side salad.
