Chicken in parma ham
Ingredients
Serves 4 - Ready in 35 minutes
  • 4 skinless chicken breasts
  • 250g mozzarella, sliced into 8
  • 20g basil
  • 6 slices parma ham
  • 1tsp olive oil
  • 1 tin new potatoes
  • 1 knob butter
  • 1 teaspoon pureed herbs
  • salad, to serve







  1. Pre heat the oven to 200c/180c fan/gas mark 6.
  2. Lay the chicken fillets out on a chopping board. Season all over. Make a small incision about 4cm long and 3cm deep in the middle of each.
  3. Stuff 2 slices of mozzarella and a sprinkling of basil into the incision. Wrap each chicken breast with 1½ slices of parma ham, to conceal the incision.
  4. Heat the oil in a pan and sear the parcels on both sides until golden.
  5. Place into a roasting tray and cook for around 20 minutes, or until cooked through.
  6. Heat the new potatoes. Drain and the whilst still over the hear stir in the butter and pureed herbs.
  7. Serve with the potatoes and a side salad.
