Chicken and Pepperoni Pasta
Ingredients
Serves 4 - Ready in 45 minutes
- 1tbsp olive oil
- 400g chicken breast, diced
- 200g pepperoni
- onion, diced
- 2 tsp chilli flakes
- 420g tinned chopped tomatoes
- 20g sugar
- 50g natural yoghurt
- 45g grated parmesan cheese
- 15g rocket
- Heat the oil in large pan over a high heat. Add the chicken breast until cooked through.
- Add the pepperoni and onion. Fry for 5 minutes until the onion has softened. Put a large pan of water on to boil.
- Add the chillies to the frying pan and stir. Add the chopped tomatoes, sugar and natural yoghurt. Simmer for 5 minutes.
- Add the pasta to the pan of boiling water and cook according to instructions.
- Drain the pasta and return it to the pan and add the sauce to this. Stir well to ensure all the pasta is completely covered.
- Serve in a bowl and top with the parmesan cheese and rocket.
