Chicken and pepperoni pasta
Ingredients
Serves 4 - Ready in 45 minutes
  • 1tbsp olive oil
  • 400g chicken breast, diced
  • 200g pepperoni
  • onion, diced
  • 2 tsp chilli flakes
  • 420g tinned chopped tomatoes
  • 20g sugar
  • 50g natural yoghurt
  • 45g grated parmesan cheese
  • 15g rocket
  1. Heat the oil in large pan over a high heat. Add the chicken breast until cooked through.
  2. Add the pepperoni and onion. Fry for 5 minutes until the onion has softened. Put a large pan of water on to boil.
  3. Add the chillies to the frying pan and stir. Add the chopped tomatoes, sugar and natural yoghurt. Simmer for 5 minutes.
  4. Add the pasta to the pan of boiling water and cook according to instructions.
  5. Drain the pasta and return it to the pan and add the sauce to this. Stir well to ensure all the pasta is completely covered.
  6. Serve in a bowl and top with the parmesan cheese and rocket.
