Bubble & Squeak Potato Cakes with Bacon
Ingredients
- 750g mashed potato
- 1 Cabbage, shredded
- 1 Large Onion, thinly sliced
- 1 tsp crushed chillies (Optional)
- 2 tsp Olive Oil
- 300g (10oz) Unsmoked Bacon
- 2 tbsp Squeezy Honey
- 420g Can of Baked Beans
- Remove the required amount of mash potato from the freezer and heat in the microwave. In a frying pan, fry the cabbage and onion for 5 minutes then drain.
- Stir in the cabbage, onion and chillies into the mash potato. Shape into eight cakes. Brush a large non-stick frying pan with oil and fry the cakes for 5 minutes on each side until crisp and golden.
- Grill the bacon for 3-4 minutes on each side and brush with honey a minute before they're done.
- Serve with the potato cakes and beans.
